Breakfast Dishes to Start Your Mornings
Need a breakfast that you can prep in advance and take on the run? We have you covered with our Grab-and-Go Sausage and Egg Muffins!
Ingredients
One package of Uncle Charley’s Maple Breakfast Links, crumbled
1 tsp. olive oil
2 cloves garlic, minced
1 medium red bell pepper, chopped
5 large eggs
4 large egg whites
½ c. cottage cheese
½ tsp. oregano or Italian seasoning
½ tsp. salt
¼ tsp. black pepper
Directions
Preheat oven to 350F.
Heat olive oil in a medium pan and add the onion, garlic, and green pepper. Cook until vegetables are tender.
While the vegetables are cooking, whisk the eggs and egg whites together. Add the cottage cheese and crumbled Uncle Charley’s Maple Breakfast Links. Once well-combined, add cooked vegetables, oregano, salt and pepper to the mixture.
Spray muffin pan with non-stick spray and fill cups about halfway.
Bake for 18-20 minutes until cooked through, then serve! Refrigerate your leftovers for tomorrow…or a snack later

Ingredients
Two packages of Uncle Charley’s Breakfast Links, crumbled
30 oz. frozen hash browns
2 c. shredded cheddar cheese
8 eggs
2 c. milk
1 tsp. seasoned salt
¼ tsp. garlic powder
¼ tsp. onion powder
Directions
Brown the sausage in a pan on medium and drain the fat.
Grease a pan and layer as such: hash browns, sausage, cheese.
Whisk the eggs, milk, salt, garlic and onion powder together. Once mixed, pour into the pan.
Bake uncovered at 350F for 30 minutes or until browned on the top.
If you’d like to prep in advance, you can cover it and save in the refrigerator until you need to bake it. If you take this route, you’ll need to bake it for closer to 45 minutes!
Dinner Ideas for the Whole Family
Keeping dinner healthy around the holidays can be TOUGH – have you seen how much butter is in most recipes?! And don’t get us started on the dessert options…we need to make sure we save some room for pie by eating healthier meals before digging in. With our Sausage- Parmesan Spaghetti Squash, you won’t even realize you’re being healthy! Plus, it’s keto-friendly.
Ingredients
One package of Uncle Charley’s Pork Sausage, crumbled
One large spaghetti squash (around 4.5 lbs)
¼ c. butter cut into cubes
1 c. shredded parmesan cheese
Salt & pepper
Directions
Preheat oven to 375F. Line a baking sheet with parchment paper.
Cut the stem off of the spaghetti squash, then cut into 1” rings width-wise. Remove the seeds and pulp from each ring.
Place the squash rings laying down on the prepared baking sheet. Bake for 40-45 minutes.
While they bake, cook the sausage in a skillet over medium heat until browned.
Remove squash from the oven and allow to cook, then take the cooked squash from the skins and separate strands with a fork. Toss the squash with butter until all are fully blended, then stir in parmesan cheese and sausage.
Season with salt and pepper, then serve.

Ingredients
One package of Uncle Charley’s Pork Spicy Italian Sausage, sliced
2 tsp. olive oil
1 small onion, finely chopped
1 celery rib, finely chopped
1 garlic clove, minced
1 c. reduced sodium chicken broth
1 c. water
¼ tsp. crushed red pepper flakes
1 ¼ c. uncooked Israeli cousous
2 tbsp. minced fresh parsley
¼ c. crumbled feta cheese
Directions
In a large nonstick skillet, heat oil over medium-high heat. Add the sausage, onion, and celery, cooking until sausage is browned. Add garlic and cook for another minute.
Stir in broth, water, and pepper flakes, bringinging to a boil. Stir in couscous, reducing heat and let simmer, covered, for 10-12 minutes. Stir in parsley and sprinkle with feta, then serve.
