NEWSIrish Sausage Rolls Recipe
Wrapping meat in buttery dough is something that can be found in almost every culture of the world. Each one loves to do it celebrate how they do it in their own way. Irish sausage rolls are a delicious treat found in Irish and British cooking. It’s something you can find in pubs, bakeries, and especially Irish kitchens.
They’re a comforting, easy to make food that you can snack on fresh from the oven, or even chilled. Traditional Irish sausage rolls are made with ground pork sausage, plenty of warm seasonings, and rolled pastry. To celebrate this delicious dish, we wanted to share how to make Irish sausage rolls for your own Irish comfort food at home!
Ingredients:
3 Puff pastry sheets
2 Eggs (beaten, 1 for the sausage filling, set aside the other for brushing pastry)
Sausage Filling
1lb of Uncle Charley’s fresh pork sausage (squeezed from links)
1 red onion finely sliced
1/2 tsp Dried thyme
1/2 tsp Dried marjoram
1/2 tsp Dried basil
1/2 tsp Dried rosemary leaves
1 tsp Dried parsley
1/2 tsp Dried sage
1 cup of breadcrumbs
1 Garlic clove (minced)
Salt and Pepper to taste, but we recommend around 1/8 tsp each
Cooking Instructions:
- Preheat the oven to 400ºF and line a baking sheet with parchment paper. Trust us, you’ll want to add the paper.
- Heat the olive oil in a saucepan and add the onions to cook gently for about 25 minutes until soft and golden brown. Spread out on a plate to cool.
- While the onions are cooking, be sure your spice mixture is finely ground. Some would even suggest going as far as using a coffee grinder!
- Slit the skins of the sausages and pop the meat out to put it in a mixing bowl with the onions and breadcrumbs, then scrunch well with your clean hands to mix together. Did we mention you would have to get your hands a little bit dirty for this one?
- On a floured work surface, roll the pastry out into a big rectangle cut it lengthways into two long, even rectangles. Form the sausage mixture into tube shapes with your hands and lay along the center of each rectangle.
- Beat the egg and brush the pastry with the mixture, then fold one side of the pastry over, wrapping the filling inside. Press down with your fingers or the edge of a fork to seal the join. The fun part is that they don’t have to look too pretty.
- Cut the long rolls into the sizes you want and space them out on a baking tray. Brush with the rest of the egg wash and bake in the preheated oven for 25 minutes or until puffed, golden and cooked through.
- Cool slightly on a rack and serve hot or cold with sauce of your choice! We personally prefer them piping hot all by themselves. Use this recipe for any comfort food craving or even for St. Patrick’s celebrating.
