5 FAVORITE FALL VEGETABLE PAIRINGS FOR YOUR GRILLERS

Every Uncle Charley’s Griller needs a killer side, and we cooked up some great vegetable pairings for your fall dinners!

Herb Roasted Parmesan Acorn Squash

Squash season is the best season 🍂 Not only is this recipe a quick one, but it’s super simple!

Ingredients

1 large acorn squash
⅓ c shredded parmesan cheese
2-3 T fresh herbs (we like thyme and rosemary for this recipe!)
1 T butter, melted
½ t garlic powder
¼ t salt
⅛ t pepper

Instructions

Preheat oven to 400 degrees.
Cut squash in half and scoop out seeds. Cut each half into ½-in thick slices.
Combine all ingredients in a large bowl and toss to combine.
Transfer to a large sheet pan and sprinkle parmesan cheese onto squash slices.
Bake for 25min and garnish with more parmesan and herbs.

Roasted Brussel Sprouts with Garlic

This is a favorite at Uncle Charley’s HQ – nothing says fall like roasted brussel sprouts!

Ingredients

1 lb brussel sprouts
4 T olive oil to coat bottom of pan
5 cloves garlic, peeled
Salt and pepper to taste
1 T balsamic vinegar

Instructions

Preheat oven to 400 degrees.
Trump bottom of brussel sprouts and slice each in half. Heat oil in cast iron pan until it shimmers, then put sprouts cut-side down with garlic, salt, and pepper until they begin to brown on the bottom, then transfer to oven. Roast, shaking pan every five minutes, for about 15min.
Add more salt and pepper if necessary and stir in the balsamic vinegar.

Roasted Spaghetti Squash, Tomatoes, and Zucchini

Who needs pasta when you can have spaghetti squash? 😋 This recipe works as a side or with your griller sliced up and mixed right in!

Ingredients

1 ½ pint grape tomatoes
¼ c olive oil
2 t minced garlic
1 spaghetti squash
1 large zucchini
¼ t of salt and pepper
Grated parmesan

Instructions

Position racks in oven to divide oven into thirds. Preheat to 425 degrees.
Halve tomatoes, placing them along with 3 T oil and garlic in a baking dish.
Halve spaghetti squash and scoop out seeds, then brush the cut side with some of the remaining olive oil, then placing the squash cut side down on a baking pan.
Quarter zucchini lengthwise and cut into ¾-in pieces. Toss with remaining oil and place on a baking pan.
Roast tomatoes and squash on top rack for 40min, and roast zucchini for 30 minutes.
Scrape spaghetti squash into a large bowl, tossing with the rest of the ingredients. Sprinkle with parmesan and serve with grillers.

Roasted Sweet Potatoes with Honey and Cinnamon

Taking a break from the savory sides, here is a sweet one to go alongside your Uncle Charley’s Hot Italian grillers!

Ingredients

4 sweet potatoes, peeled and cubed
¼ c olive oil
¼ c honey
2 t ground cinnamon
Salt and pepper

Instructions

Preheat oven to 375 degrees.
Lay the sweet potatoes in a single layer on a roasting tray, drizzling with oil, honey, cinnamon, salt, and pepper.
Roast for 25-30min.
Drizzle with more olive oil and sprinkle with cinnamon when finished.

Lemon Garlic Sauteed Cabbage

Cabbage doesn’t have to be boring! This recipe is best with white cabbage and will taste great alongside our grillers.

Ingredients

2 lbs white cabbage, shredded
1 ½ T olive oil
1 T garlic, minced
Pinch crushed red pepper flakes
½ t sea salt
Half a lemon, cut in wedges

Instructions

Heat olive oil in a large skillet or dutch oven over medium-high heat. Add cabbage, garlic, red pepper flakes, and salt.
Stir occasionally until cabbage is tender and beginning to brown, about 10 minutes.
Squeeze the juice of the lemon wedges and adjust flavor with salt and pepper as needed.
