INGREDIENTS.
- 3 LinksUncle Charley's Hot Italian Sausage
- 1/2finely diced onion
- 2 clovesGarlic
- 1 tbspOlive Oil
- 1 tspSalt
- 1/2 tspBlack Pepper
- 2 cansTomato sauce
- 2 cupsChicken broth
- 1 cupHeavy cream
- 2 cupsFresh Cheese Tortellini
- 1/2 tspCayenne Pepper
- 1/2 tspcrushed red pepper
- 1 tspChopped Basil
INSTRUCTIONS.
- In a small skillet, cook Italian sausage until done. Set aside.
- Heat pot over medium heat. Add olive oil and swirl to coat bottom of pan.
- Add onions and sauté until begin to soften and turn translucent.
- Add crushed garlic and continue to sauté for another minute.
- Add 1 and ½ cans of tomato sauce to pot followed by chicken broth. Continue to stir everything together. (Note: For a smooth soup, blend tomato and onion mixture using an immersion blender or regular blender before proceeding.)
- Add cooked sausage followed by salt, pepper, cayenne and crushed red pepper. Allow mixture to cook for 5 minutes over medium heat.
- Taste to see if soup is at the level of spice you are comfortable with. If too spicy, add a little bit more tomato sauce and add additional cream in the next step.
- Once seasoned to your liking, add cream and stir to combine. Bring soup to a boil and then add fresh tortellini noodles. Cover and cook for 5-7 minutes.
- In last few minutes of cooking, add fresh basil and stir. Serve with a garnish of basil or Parmesan cheese and enjoy!

Notes
To make a kid friendly version leave out the cayenne and crushed red pepper.
