CREAMY SPICY SAUSAGE AND TORTELLINI SOUP.

INGREDIENTS.

  • 3 LinksUncle Charley's Hot Italian Sausage
  • 1/2finely diced onion
  • 2 clovesGarlic
  • 1 tbspOlive Oil
  • 1 tspSalt
  • 1/2 tspBlack Pepper
  • 2 cansTomato sauce
  • 2 cupsChicken broth
  • 1 cupHeavy cream
  • 2 cupsFresh Cheese Tortellini
  • 1/2 tspCayenne Pepper
  • 1/2 tspcrushed red pepper
  • 1 tspChopped Basil

INSTRUCTIONS.

  1. In a small skillet, cook Italian sausage until done. Set aside.
  2. Heat pot over medium heat. Add olive oil and swirl to coat bottom of pan.
  3. Add onions and sauté until begin to soften and turn translucent.
  4. Add crushed garlic and continue to sauté for another minute.
  5. Add 1 and ½ cans of tomato sauce to pot followed by chicken broth. Continue to stir everything together. (Note: For a smooth soup, blend tomato and onion mixture using an immersion blender or regular blender before proceeding.)
  6. Add cooked sausage followed by salt, pepper, cayenne and crushed red pepper. Allow mixture to cook for 5 minutes over medium heat.
  7. Taste to see if soup is at the level of spice you are comfortable with. If too spicy, add a little bit more tomato sauce and add additional cream in the next step.
  8. Once seasoned to your liking, add cream and stir to combine. Bring soup to a boil and then add fresh tortellini noodles. Cover and cook for 5-7 minutes.
  9. In last few minutes of cooking, add fresh basil and stir. Serve with a garnish of basil or Parmesan cheese and enjoy!

Notes

To make a kid friendly version leave out the cayenne and crushed red pepper.
