Do you want to deviate from the usual barbecue you make for dad this Father’s Day? Great idea! It will be a wonderful way to make this socially distant Father’s Day extra special for him. Here are some ideas to get your planning started!

Kielbasa Grillers with Cast Iron Potatoes and Brussel Sprouts

For a relatively easy and quick dinner for dad, this meal will deliver. Plus, minimal dishes to do afterwards!

Ingredients

One package of Uncle Charley’s Kielbasi Grillers

4 large russet potatoes, peeled and chopped into even cubes

1 bag brussel sprouts, cleaned and shredded

2 tsp. olive oil

2 garlic cloves, minced

1 large yellow onion, chopped

1 tsp. chili powder

3 packages mixed berries

3 tsp. chopped mint

Directions

1. Put your cast iron over medium-high heat. Once heated, add olive oil. Wait about 30 seconds for it to heat as well, then toss in potatoes and onions. Sauteé them until they are just beginning to brown, then add the brussel sprouts, garlic, and chili powder.

2. Once you have added the brussel sprouts, toss the kielbasi grillers on the grill or into a nonstick pan. Turn them periodically to ensure that all sides are well cooked and slightly browned.

3. Once both the veggies and kielbasa grillers are evenly browned, plate them up with the berries and chopped mint on the side. Enjoy!

Sweet Italian Sausage and Veggie Skewers

If you’re looking for a quick way to use that charcoal grill to make dad’s day, these will nicely showcase the charring you can achieve!

Ingredients

One package of Uncle Charley’s Sweet Italian Sausage, sliced

2 tsp. olive oil

2 medium yellow onions, coarsely chopped

Red and green bell peppers, coarsely chopped

Garlic salt, as desired

Directions

1. Load sausage slices and chopped veggies on skewers, alternating to make them look bright and colorful. Roll in olive oil and season with garlic salt.

2. Throw them on the charcoal grill, turning periodically to get an even char on all sides.

3. Serve up on a platter with fruit and pasta salad!
